Hulutou (intestines in Broth) is a local delicacy in Xi’an . Its raw materials are intestines . Before it is served , the customer needs to break the pancakes into small pieces , then the chef soaks them in te boiling bone soup three or four times with pork intestines, chicken , sea cucumber and squid on the top . Afterward , lard, and greens are added to it . It is often served with preserved garlic and chili jam . Tong’s Cured Mutton in Xi’an is known for its freshly red color special taste and softness .Legend has it that in 1900 when the Eight- Power Allied Forces invaded Beijing , Empress Dowager Ci Xi fled to Xi’an with Emperor Guang Xu . One day Ci Xi passed the Western Street in her imperial carriage . While climbing the slope, she caught a strong armomatic smell. The provincial governor told her that the scent came from a restaurant selling mutton and beef . It was called the Tong’s after the name of the owner . Ci Xi felt salivating at the thought , so she stopped to have a try . After tasting she sang high praise of he meat . The official then sent for Xing Tingwei , tutor of the Minister of Military Department Zhao Fuqiao , and had him write on a wooden board “Nian Zhipo”, which means the slope was where the imperial carriage once stopped . The board still bears to the eyes today the golden inscription . Ever since then the great fame of the restaurant spread all over this ancient capital city . The Cold Noodles are a local dish in Southern Shaanxi and Central Shaanxi . Cold noodles are usually srved as cold snacks . Sometimes , they can bee served as hot snacks after they are stir-fried with sliced meat , sausage and greens .

It is originated from mutton and beef custard in ancient times that was listed as royal food in the Western Zhou Dynasty . Poems about it can also be found in Sima Qian’s “Historical Annals” .Then in the Song and Yuan dynasties , this delicacy gained even greater populaity because of an increase in the Moslem population in Xi’an .There is a legend that connects the table manner for this delicacy with Emperor Tai Zu , Zhao Kuangyin, the first emperor of the Song Dynasty . Zhao was poverty-stricken and reduced to be homeless at an early age . One day when he was wandering in the street , he begged in a meat store for some hot mutton soup , he felt much warmer and energetic . Ten years later, Zhao came to his throne . Once when he was on an inspection tour in Chang’an he came o the store where he had begged for soup and asked his wife to bake some pancakes , broke them into small pieces , cooked for a few seconds with seasoning and soup and at last added several mutton slices. The Qishan noodles have a long history and became well-known as early as the Qing Dynasty .The noodles must be hand-made of good wheat flour . The sauces include pork shreds, citron daylily , egg , wood fungus , and bean curd which are flavored with a variety of spices . Before they are served, the noodles are first scooped and then mixed with ingredients . The Qishan noodles originated in Qishan County , hence the name . When they are served , there is more soup , which tastes sour and hot, than noodles in the bowl .
Guo Kui (pancakes), a well-known snack in Qianxian County , is thick in the middle and thin on the verge with designs of the wheel in the surface . It is crisp and tasty and is always a good present for friends and relatives . In the process of making it, the wheat flour is mixed with a limited amount of water to make a paste and then baked over soft fire so that it is easy to store and handy to carry because of it contains almost no moisture .
